Chocolate Chip Cookies

Chocolate chip cookies, made with actual chips

 

A Birmingham chip shop is reinventing a biscuit favourite by putting a real novelty on its menu - chocolate chip cookies made with actual chips. 

 

  1. Preheat the oven to 190°C (375°F), Gas mark 5
  2. Drizzle the chips with olive oil and lightly season. Roast for 25 minutes until golden and crisp. Set aside.
  3. Combine the butter and sugar in a bowl. Stir in the egg and mix well. Add the flour, baking powder, bicarbonate of soda, cocoa powder, oats and mashed potato and mix into a dough.
  4. Divide the mixture into 16 balls and flatten slightly. Space about 10cm apart on a baking tray lined with baking parchment.
  5. Bake in the oven for 5-6 minutes then place the potatoes on top of the cookies and bake for a further 5-6 minutes. Remove the cookies from the oven and leave to cool.

3 large potatoes (such as King Edward), peeled and diced

2tbsp olive oil

Salt

 

For the cookies

1 large potato (such as King Edward) about 100g, boiled and mashed

100g butter

110g soft brown sugar

25g caster sugar

1 egg

90g plain flour

½ tsp baking powder

½ tsp bicarbonate of soda

10g cocoa powder

40g oats
